- culinary lavender is used in cooking, teas, and coffees, and even lemonades. Use it in pastries for an added flavor.
- The best lavenders for culinary use are ‘Folgate, ‘Buena Vista’, ‘Hidcote Pink’, ‘Melissa’, and ‘Royal Velvet’.
- All the culinary lavenders listed are cultivars of the Lavandula angustifolia species. These have low camphor content when compared to the hybrids such as ‘Grosso’, ‘Super’, ‘Provence’, and other lavender hybrids. While some of the hybrids are used for baking, they are not the same quality you will find with Mesa Lavender Culinary Lavender.
Folgate is included in our lavender pink Himalayan salt, our Lavender Mediterranean salt, Lemon Lavender Pepper, and Lavender Sugar.
Use an herb grinder, mortar and pestle, or food processor to grind the buds to the proper consistency. This concentrates the flavor so be sure to be on the conservative side when you use this fine powder. You want to enhance the flavor of what you are preparing. You don’t want to overpower the other ingredients.
